Kofta is a family of meatball or meatloaf dishes found in South Asian, Middle Eastern, Balkan, and Central Asian cuisine.
Ingredients:
100 g leek, chopped
300 g dill, chopped
50 g oregano , chopped
2 cups rice
500 g inced meat, mutton
1 glass cooked green fava beans
1/2 glass wheat, cooked
1 or 2 eggs
1 onion
Liquid oil
2 tablespoons tomato paste
Spices like, black pepper, turmeric, and coriander powder as well as salt for seasoning
Procedure:
Wash the rice and put in a pot. Sprinkle with a little salt and turmeric. Pour in water but make sure it does n't come above the rice. Set on the heat and allow to cook. Take a mixing bowl and mix the cooked rice, ground meat, cooked wheat, cooked fava beans, the aromatic leafy vegetables, which are all finely chopped) salt, pepper and coriander powder. Crack 1 or 2 eggs in. The number of eggs depends on the mixture so that you get a rather loose mixture( not very firm). Start kneading the mixture just like what you do with patties.
In a proper-sized pot, fry the chopped onions and sprinkle with turmeric. Add tomato paste and water and bring to a boil. Make tangerine-sized balls out of the mixture and put inside the boiling water. Don't forget to reduce the heat to low when placing them inside the pot to prevent them from breaking up. Don't cover the pot till the meatballs( Kufta) are a little firm. Adjust the seasoning of the gravy. Make sure it doesn't't contain too much salt as boiling for minutes will make it even more salty. After 1 hour the dish is ready. Pour the gravy in a bowl and place the kuftas in a plate. serve with bread. Bon Appetit!
